Thinking about building your wedding menu? The job can seem overwhelming – not to mention when you start to consider any special dietary needs you or your guests may have. It’s important to respect those needs and ensure everyone can enjoy a wonderful meal, which is where Rosemary’s Catering and their 70+ years of expertise can help. We sat down with the Rosemary’s team to talk about being inclusive of dietary needs when creating a wedding menu, new trends they’re noticing and a few more gems of advice you don’t want to miss!

How do you adapt to dietary needs?

We ask clients to be as specific as possible. When everything is made in-house, it makes it really easy to skirt dietary restrictions! Knowledge is power though, so getting a detailed list of the guests’ names, allergies and where they are sitting can help us. We will let the guests know either a.) what is safe for them on the menu tonight, or b.) that we will be bringing them a special plate that fits their diet. Guests are typically very grateful that we’ve addressed it head on and they don’t have to ask!

Plated vs. buffet style – what will you be seeing more of this season, and how do you decide which option is best for you?

We will see a few more buffets in the wedding world. A lot of couples are shrugging the traditional idea of everyone getting served at the table. Buffets help to give your guests options and choices and required the smallest amount of planning from the couple. We typically ask about the feel of the event (formal vs. more casual) and how much time they have set aside if for dinner, if we need to help a couple decide!

How do you incorporate local fare into a wedding?

We try and recreate some of the foods known to Austin with our own twist. We started with catering barbecue and fajita buffets 70 years ago, so keeping true to our wheelhouse, we do still see a lot of those options. For the more adventurous couples, we do a lot of fusion stations. They range from Asian fusion, with dim sum and ramen, to street tacos, to even some completely vegetarian stations. We try and make nods to the varied food culture here in Austin.

How do you incorporate clean and green eating?

For the most part, every meal couples choose comes with a fresh, colorful salad. If we notice that the couples have chosen stations without any veggies, we usually try and move things around to get something healthy on the menu. But for the most part, our clients are looking for a little more indulgence than clean eating on the big day!

What catering trends are you currently loving?

Bright colors and plating artistry are always trending and always on our top list. We try and make sure that each item on the menu covers multiple spectrums on the rainbow for a very eye-catching appearance.

What is your favorite dish to serve?

Honestly, we’re going to go with hors d’oeuvres. We love nothing more than the special platter prepared just for the bride and groom with four different hors d’oeuvre options. Some of our favorites are our smoked chicken botana, shrimp spring rolls, and the lavender aqua fresca with goat cheese crostini.

Any tips on creating the wedding reception menu?

We’re thrilled to introduce you to a fabulous Austin wedding planning team today: Mrs. Planner! Ashlee Voda of Mrs. Planner chatted with us about the passion behind this business and trends she loves and and showed off some of her team’s best work.

For the Mrs. Planner team, nothing is more significant when it comes to a planner-bride relationship than trust. “When a client meets with me or a planner from our team, it is most important to get that feeling of ‘It’s like I’ve known you forever’ – and that simply translates to a level of trust,” Ashlee explains. “We have a chameleon aesthetic when working with our clients in different venue spaces. Our clients lead the vision, and we pride ourselves in being the planner team to complete the process. We work with clients that love a lot of greenery, whether in their design or surrounded by the scenic views of the outdoors. When we begin the process, we always want to know where our clients love to shop for furniture, and from there we can begin the overall look that may fit them and their venue best.”

“The greatest parts of this wedding were all owed to the creative personalities the bride and groom had. The ceremony start time was chosen by the bride based on numerology for their wedding day. We also got to put an Austin touch on their double grand exits, one during the daylight, and one at night. By putting their unique touch on the day, we were able to make their event like no other. The details often make up the event, but in this case our clients were just the coolest and with their unique vision it made our job a lot more fun.”

“When we have the opportunity to set up a first look, we do all we can to make it private and perfect for the couple. Joel and Jessica had traveled with their two dogs, so we worked with the great team at Hotel Van Zandt to have Jessica walk in to see Joel first, and as Joel turned around we waited just a moment and then sent in their pups. It made an already special moment, a little more special to them.” Such a neat touch for this sweet couple!

First looks have been trending for a while now, and for good reason! When it comes to other wedding trends Ashlee and the Mrs. Planner team loves, it’s all about working within the client’s budget to get the most bang for their buck. “When working with our clients to make the most of their budget, we have found browsing rentals such as chairs or glassware can make such an impact in the overall look of the space, but doesn’t have to go over budget. Ghost chairs, cane back chairs, colored vintage glass or gold-rimmed… these small details can elevate their look and are details that not only guests will notice, but will also shine in the photos.”

We are in love with this fresh boho scene, captured at one of the most dynamic Austin venues, Mae’s Ridge. With it’s clean, white, shiplapped walls, the space feels homey, yet modern and fun – easily customizable thanks to a clean-canvas palette. With the additions made by this team of vendors, the fresh boho vibe came to life. Scavenged Vintage Rentals set up a darling lounge display, complete with wicker chairs, a vintage rug and millennial pink couch. Peaches mixed with garden greenery, creamy whites and hints of fall foliage were the foundation of the relaxed, youthful, free-spirited vibe, thanks to Bouquets of AustinOwl & Envelope designed a hand-sketched invitation suite with emerald green details in velvet – perfect for any season of bohemian weddings. Unique jewelry from Eliza Page adorned the bride in gold, accompanying an off-the-shoulder gown via Moonlight and Moss that featured delicate, embroidered florals. LUSTREbella bold braid with loose tendrils as well as a bold, orange lip color completed the off-beat bridal look. These Stylish Dried and Neutral Blooms are a Must See

Soft, sophisticated and swoon-worthy, this styled shoot featuring neutral blooms and boho textures has us with all the heart eyes over here! Nikk Nguyen Photography beautifully captured the earthy tones of this inspirational scene, from the subtle gold and copper metallics in the altar area and stationery to the ivories and peaches throughout the venue. Rentals from Loot Vintage work amazingly in this space, including the terra cotta vases and bohemian rug, and especially the chairs surrounding the intimate dinner space! We love how the natural light pours in and how the shiplap walls provide a simple, clean backdrop. What makes a wedding harpist unique?

Great question! While our mothers and grandmothers were probably married in their family church and the church organist played the traditional bridal march, we have so many choices today! We can have our weddings just about anywhere, from an amazing event venue in the country, a beautiful downtown hotel, on the beach or even on a mountaintop!  

Harps are perfect solo instruments for weddings wherever they are held! Like an organ, we play the whole range of notes that would take several instruments to get the same sound from. And the sound is fuller than any other single instrument that is portable. 

And harps are quite portable! While there are some places I wouldn’t attempt to take my concert grand, with proper planning I can play almost anywhere. And my small harp, which I carry in a special harp backpack, I could easily take up to a mountain top ceremony or on a boat on a lake!

Both my concert grand and small harp are acoustic. The sound carries well, but I do have pickups installed on both so they can be plugged into an amp for bigger spaces or outdoors if needed. I also use a battery-powered amplifier, so I do not need to be near a power source. 

While I’m commonly contracted to play as a soloist, I also play in a duo or trio as well! And honestly harps are fairly rare compared to other instruments, so that makes them special and unique! 

What are your most popular songs?

Traditional pieces tend to be Ave Maria, Jesu Joy of Mans Desiring or Canon in D. These pieces have been used for years because they are so beautiful and timeless. One of my favorites is actually Bach’s Arioso. 

For contemporary music, it has really varied in the last few years. I do get requests for songs like All of Me by John Legend, A Thousand Years or Labrinth’s Beneath Your Beautiful. However, the last few years I’ve also had a lot of requests for older songs like What a Wonderful World, Can’t Help Falling in Love and ones by Fleetwood Mac and John Denver. 

How does a couple go about selecting songs for their day?

Harpists truly can play just about anything that would be suitable for a wedding ceremony. Every bride and groom are unique, and it’s your day! I get requests all the time for songs that are special for the couple.  I once played for a couple who had a Christmas-themed wedding in August and requested I play Christmas music. Others have requested Disney-themed music. It’s your wedding so you should think about what will make your day special to you, and your wedding will be memorable for everyone! You can search for top current wedding ceremony songs if you are stuck for ideas. And you can always look at the wedding page on my website or at my general repertoire list for ideas!  

What may couples not know about your services?

We do not normally come to rehearsals. We do however spend a lot of time consulting with you before your wedding once you’ve signed a contract. If you really aren’t certain how a piece will sound, I can usually sightread, record and send it to you. I’ve done this several times and the pieces have ended up being used every time. There are a lot of decisions to be made, and I want to make sure you are excited and confident about the music you chose. 

Since I am not at the rehearsal, I do meet with the officiant/wedding planner, prior to the guests’ arrival, and we go over anything that may have come up at the rehearsal. We confirm the music and talk about cueing me if I can not see where the wedding party is entering. 

Where is the best place to incorporate a harpist in your wedding?

Traditionally you will use a harpist/soloist during the ceremony, although in recent years, more and more weddings will have the ceremony, cocktails and reception all in one place, so I will play through the cocktail hour or longer. 

For the ceremony, I arrive 45 minutes to an hour prior to the ceremony start time. I setup, tune and speak with the officiant/wedding planner, and then I begin playing 30 minutes before the ceremony as your guests arrive. This is normally a variety of soft romantic music of my choice. I will play for the processional, at any time during the ceremony you would like, the recessional and then after as your guests are leaving. 

For weddings that take place in a church/house of worship, I often play there and then move to the cocktail/reception before and during dinner with the DJ taking over once the meal/speeches are over for the dance.
